UK hospital debuts meat-free menu after talks with vegan head of sustainability

University Hospital Southampton has appointed Jason Light, Head of Sustainability and Energy, to help implement changes to make the NHS hospital more environmentally friendly.

UHS is committed to reducing meat from its menu as part of these changes, recently making an impact by exclusively serving vegetarian and vegan meals in its canteen, The Feast Restaurant, on Earth Day 2021.

Furthering the sustainability agenda at UHS, a virtual event was also created to co-incide with Earth Day, where a number of speakers gave talks about the environmental challenges that face the healthcare industry today.

Speaking about the webinar, Light, who is also vegan, said: “I was honoured to take part in this event alongside so many experts. The presentations were very informative and insightful questions from our audience led to a really engaging discussion.”

“As the public sector grouping with the highest level of carbon emission, the NHS has a responsibility to respond to this crisis, which is why we are committed to delivering a world-class sustainable healthcare system. Today’s event is just the start of our renewed sustainability agenda.”

Educational posters have been put up in the canteen, in an effort to empower staff members to engage in the discussion around environmental sustainability and make better informed decisions.

One poster stated: “Every Monday The Feast Restaurant served 70 portions of pork. This contributes to 9.8 tonnes of greenhouse gas emissions a year.

“This is the same as driving your car 25,000 miles a year, heating your home for nearly four years, and taking 22,000 showers for eight minutes in one year.”
