Project Pollo aims to put chicken-based restaurants out of business

Lucas Bradbury, a vegan entrepreneur, hopes to put chicken-based restaurants out of business by 2024 with his latest venture, Project Pollo. The project was launched with the intention of challenging what we traditionally think of chicken. This vegan chicken chain offers vegan versions of chicken sandwiches, strips, and wraps, in addition to a variety of sides, such as mac and cheese and loaded papas.

Unlike your average chicken chain, Project Pollo is mission-driven and challenges more than just our ideas of chicken: the chain will pay its employees much higher than minimum wage and its menu items will help support community organizations. For example, Project Pollo will feature “project” items on the menu, and a portion of those sales will go to animal charities. One such menu item is the Original Project, a chicken sandwich with dill pickles and aioli.

The first Project Pollo location opened in September 2020 and gave away 1,600 plant-based chicken sandwiches on World Vegan Day. There are currently five Project Pollo locations in Texas – in San Antonio and Austin – and Bradbury has plans to add more. The newest location operates in what used to be a Jack-in-the-Box, and future locations are planned to take over Subway and Church Chicken locations.

Bradbury’s goal is to open up 100 Project Pollo locations by 2024. Even more daring? He hopes to put Chik-fil-A out of business entirely by 2030.
