Lab-grown sushi is coming to San Fransisco

There’s nothing fishy about a new sushi bar that is coming to San Francisco, CA. Though the menu will be full of fish, not one item will come from the ocean.

This sushi bar is a part of Wildtype and will be located adjacent to its pilot production facility. Wildtype claims to be reinventing seafood. The aquaculture startup is known for its sushi-grade salmon. Here’s what sets this company apart: their fish comes from a small amount of fish cells that were grown in a lab.

The founders of Wildtype – cardiologist Aryé Elfenbein and former diplomat Justin Kolbeck – created the startup with the intention of reducing the stress placed on the oceans by industrial fishing. Fish lovers have no cause to worry. The startup aims to create cell-based fish that is identical to the animal-based version, minus the cruelty and other problems.

Wildtype is dedicated to education and transparency as well. The startup owns a complex that was designed by Shuo Zhai, an acclaimed architect. With an education center complete with bleacher seating and a glass door, Wildtype wants consumers to know exactly what they’re doing. The new sushi bar will be a part of this complex.

This innovative establishment is slated to open in the fall.
