Impossible Foods is developing plant-based milk
Impossible Foods, known for their widely popular Impossible Burger, is working on its first non-dairy milk. This new development is in line with the startup’s goal of replacing all animal-derived food with plant-based alternatives by 2035.
Though the brand has yet to name their milk product, they are developing it to mimic dairy in taste, texture, and functionality. During a press conference, Impossible Foods announced its intention for their plant-based alternative to be “identical” to cow milk in all ways.
To prove their point, Impossible Foods Senior Flavor Scientist Laura Kilman poured the new milk alternative into hot coffee. Unlike milk alternatives that are currently available, this vegan prototype did not separate, instead imitating dairy milk in its use.
Impossible Foods says that their plant-based milk is still in the development stage. As such, they have not yet announced when the new product will be commercialized.
Vegan milk is the next step for the startup. Impossible Foods is also doubling its research and development team in order to produce new products, such as vegan bacon, fish, and steak. The startup is also initiating the Impossible Investigator Project, which will double the number of scientists working with them.
